Summer is upon us and it’s time to make some popsicles!!! They are so much healthier for you then the store bought kind and super easy to make too! I don’t know about you, but when I think of summer I think of Hawaii, which makes me think of pina coladas. haha And I LOVE coconut and pineapple so thought It would be the perfect start to the popsicle craze I go through during the Summer months. Coconut Pineapple Popsicle
1 Cup Frozen Pineapple
1/2 Cup Coconut Milk
1/2 Cup Coconut Water (I love Harmless Harvest)
3 Tablespoons Raw Honey
1/2 Cup Shredded Coconut (optional)
Directions: Blend first 4 ingredients in a high speed blender until well mixed. After it’s well blended add the shredded coconut to give your popsicles that extra texture. You can leave it out if you don’t like the coconut texture. I love it though!
Yields: 6 popsicles or more depending on the mold you use.
