Recipe-Coconut Adzuki Bean Smoothie

Beans in a smoothie!? Yup! This bean is on the sweet side and is super popular in Japan and used in many desserts, so I thought why not? So I googled it and found this recipe. I tweaked it just a tad. Adzuki Beans are chocked full of iron, folic acid and protein which are perfect for me and perfect for my growing toddler! I also used some leftover beans as finger foods for Nico. Check out some more cool facts on Adzuki Beans here and here.

Ingredients:

2 Frozen Bananas (Peeled and Chopped and placed in freezer: I’m sure you can use fresh too)

2 Small Figs (Peeled and chopped)

1/2 cup Cooked Adzuki Beans (I used sprouted ones you can get at Wholefoods)

2 Cups Unsweetened Coconut Milk (Or milk of choice)

To make it a “Green Smoothie” add spinach, kale, or any leafy green that you like. It will still taste great. I also added about 3 fresh cut strawberries.

Directions: Blend!

Yields: 2-3 Servings

I would like to make this for one person how do I preserve that’s leftover.

You can probably cut the recipe in half to make it enough for one. I always put leftover smoothies into popsicle molds for my boys to snack on for later! You can also put them in ice trays and blend up another day! Enjoy!
