This healthy snack brings me back to my Mexican roots. We used to eat this all the time growing up and I continue to enjoy this snack as an adult. You can make your own chile & limon sauce or you can buy the powdered kind at a Mexican Market. You don’t have to use the chile con limon, but then this recipe would be called Cucumber with Lemon. Remember everything in Moderation. Happy Eating!
1 Large Organic Cucumber (Or other veggie or fruit)
A Sprinkle of Chile Con Limon (Sauce or Powder)
1. Wash & Cut Cucumber (You can leave skin on if you’d like, cut part of it off or take it all off)
2. Squeeze 1/2 of the lemon or the full lemon depending on how lemony you like it
3. Sprinkle with Chile con Limon Sauce or Powder to taste
Serves: 1-2 People
*If you’d like to feed this to your toddler, Cut the cucumber up into tiny bites & Omit the Chile con Limon.
